In 1870 George Dickel used the pure water from the Cascade Springs to distill his first bottle of Tennessee whisky. Today the distillery still handcrafts the whisky in the same unique way George did over 130 years ago— because George thought whisky made in the winter was smoother, this is the only Tennessee whisky to chill before it goes into the charcoal mellowing vats.
